Sandhanaka(संधानक) - Food preparations that can be stored for a long time

Kshemakutuhalam chapter 9,part 1- good food,healthy life…

The next chapter in this fantabulous book is about a wide range of preperations… Right from the ones which can be stored for a long time (like pickles) to oil fried food like the famous ‘vada’ (which is loved all over India), there are a wide variety of dishes told. Let’s see them one by one..

1. Sandhanaka – This is the name given by the author for preperations which are sun dried and stored for a long time. They get a form like that of sauces and pickles. Author says that any suitable flower, fruit or root can be mixed with mustard oil, season it with black mustard seeds, cumin seeds, turmeric powder and sufficient salt. This must be placed under the hot sunrays, continously for three days. After this period of three days, this mixture attains excessive sour taste and can be stored for a long time. It is called as “shigra sandhanaka”.

The above type of preperation can be done with lemon, unripe mango, a fruit called bimbi, dry and wet ginger, ashgourd, black pepper, long pepper, surana, stem of the plantain, bamboo shoot and many many more ingredients as well. The ingredient which is to be chosen for it must depend on the body type and condition of the person consuming.

Author says that brinjal can also be used in this preperation but, if used, it must be boiled well before using for this dish. If prepared properly this can be stored for about one year, after which it needs to be discarded.

2. Sandhaana of pieces of fish meat – fish meat which is cut into small pieces can also be used for this type of preperation. First it has to be boiled in sugarcane juice and then keep it in either phanita (thickened sugarcane juice) or in mustard oil for a long time. Author says that, this preperation doesn’t get stale or spoilt and remains same for any amount of time….

3. Next, there are unexpected preperations including ingredients like laava, thithira, varaha etc, which are essentially meat of various animals….

4. Author also says, that in general all preperations of sandhana told above are the ones which increase pitta and decreases vata. They are all appetizing in nature too.
